TIGER NUT BISCUITS WITH RUBY, WHITE AND DARK CHOCOLATE

Tigernut biscuits

Makes 25 biscuits EASY 1 hr

WHAT YOU NEED

350g tiger nut flour (find at faithful-to-nature.co.za)

1 tsp ground cinnamon pinch salt

100g maple syrup

1 extra-large egg

250g cocoa butter, melted

2 tsp vanilla extract

200g Barry Callebaut Ruby Chocolate (call 010-300-8470 to find your nearest stockist)

100g white chocolate 90g 72% cocoa dark chocolate

HOW TO DO IT

1 Preheat the oven to 180ËšC. Line 2 baking trays with baking paper. In the bowl of an electric mixer fitted with the paddle attachment, mix together all the biscuit ingredients except the chocolates. Combine to form a pliable dough. Wrap in cling film and refrigerate for 15 minutes.
