Chicken & avocado burgers
MAKES 4
Preheat a barbecue plate or frying pan over medium heat. Cut 2 chicken breast fi llets in half horizontally; season. Heat 1 tablespoon oil on barbecue; cook chicken for 4 minutes each side or until just cooked through. Toast 4 split charcoal or plain burger buns, cut-side down, on barbecue for 1 minute. To assemble burgers, spread 1/3 cup mayonnaise or aïoli over bun bases; spread with 1 tablespoon wholegrain mustard. Top with chicken, thinly sliced red onion, baby cos lettuce leaves, 1 sliced medium avocado and bun tops.
