ARMENIAN-STYLE EIGHT-LAYER CAKE

1¾ cups (385g) firmly packed brown sugar
1 cup (150g) plain flour
1½ cups (240g) wholemeal plain flour
2 teaspoons baking powder
1 teaspoon bicarbonate of soda
1 teaspoon ground nutmeg
1 egg
1 cup milk
125g butter, melted, cooled
2/3 cup (110g) roasted hazelnuts, chopped
2/3 cup (95g) cacao nibs
GANACHE
500g dark chocolate (70% cocoa), finely chopped
2 cups (500ml) pouring cream
