Arguably the most celebrated dining establishment on this list, Chef Gaggan Anand’s eponymous restaurant has been topping lists as Thailand’s best restaurant for several years now, and made their Michelin Guide debut in 2018 with two stars. Established in 2010, Gaggan serves progressive Indian cuisine, with the Calcuttaborn chef putting a hyper-modern spin on traditional flavours that he picked up from his years working at El Bulli, the celebrated molecular gastronomy restaurant in Spain. Over the years, the menu has expanded to include more global flavours, taking inspiration from Japanese and Mexican cuisine, among others. Gaggan’s 25-course tasting menu is ‘written’ entirely in emojis, as diners take a journey through imaginative and unconventional dishes, including the likes of Indian sushi and the signature Lick It Up, a dish that is meant to be licked straight from the plate and layered in such a way to hit the right spots on your tongue. At the end of service, guests receive a menu with the dish names spelled out as a closer to the experience.
Named Asia’s Best Restaurant four years in a row, most recently placing fourth in the World’s 50 Best Restaurants in 2019, Gaggan is molecular gastronomy done right mixed with a fun and hands-on approach to savouring fine dining foods.
