PAN SEARED SALMON WITH MALVANI CURRIED SAUCE & SAFFRON RISOTTO CAKE

INGREDIENTS

• Arboric Rice 50g

• Saffron 5 strings

• Salmon steak 120g

• Asparagus 30g

• Papper Pwd 5g

• Salt 5g

• Lemon 1no.

• Butter 20g

For Curry

• 1-inch ginger, finely chopped

• 6 cloves Garlic, finely chopped

• 1 Onion, finely chopped

• Curry leaves

• 2 Tomato, finely chopped

• 1/2 tbsp Turmeric

• 1 tsp Red chilly powder

• 1/2 cup Coconut milk

• 1Tbsp Fresh Coconut grated

• 1/4 cup Tamarind Water

• 1 sprig Curry leaves

• 1 tsp Mustard seeds

• 1 tbsp Mustard oil

• Salt, to taste

• 2 cup Fish Stock

For the Malvani Masala

• 1 tsp Coriander Seeds

• 1/2 tsp Cumin seeds

• 1 tsp Fennel seeds
