Asparagus
PREP + COOK TIME 20 MINUTES SERVES 4
Preheat a chargrill pan over high heat. Trim 2cm from the ends of 480g asparagus. Group asparagus in threes, side by side, then thread two toothpicks or metal skewers through each group to hold them together. Brush asparagus with 2 tablespoons chilli-infused olive oil. Chargrill for 2 minutes each side or until tender. Serve with baby rocket leaves, finely grated Parmesan and lemon wedges.
