Growing up, Sanjana Patel spent a lot of time with her father touring Europe and visiting artisanal chocolate shops. She remembers being mesmerised by their flavours, shapes and craftsmanship and that’s precisely what influenced her to be a part of the field when she grew up. “My family has had a huge impact on me; I owe being the chef I am today to them,” reveals the Creative Director and Executive Chef of La Folie, Mumbai. “My grandmother was a great baker, and I remember making my first chocolate chip cake mixed with grated carrots and spices in a pressure cooker with her,” she recalls.
