MAPLE-WALNUT CARROT CAKE

FOR THE CAKE
Cooking spray
- 2½ cups all-purpose flour, plus more for the pans
- ¾ cup walnut flour
- 2 teaspoons baking powder
- 2 teaspoons ground cinnamon
- 1 teaspoon baking soda
- 1 teaspoon salt
- ½ teaspoon ground allspice
- ½ teaspoon freshly ground pepper
- 1 cup vegetable oil
- 1 cup granulated sugar
- ¾ cup maple sugar or light brown sugar
- 2 teaspoons finely grated lemon zest
- 3 large eggs
- 2 teaspoons pure vanilla extract
- 2 teaspoons maple extract
- ¾ cup buttermilk
- 3 cups grated peeled carrots (use the large holes of a box grater)
- ¾ cup golden raisins
