Method
Prepare the Tomatoes:
Bring a large pot of water to a boil.
Cut a small "X" on the bottom of each tomato.
Blanch the tomatoes in the boiling water for about 30 seconds, then transfer them to an ice water bath.
Peel the tomatoes, remove the cores, and roughly chop them.
