HANAZEN
Yusuke Takada, the maverick Japanese chef behind the acclaimed two-Michelin-starred contemporary French restaurant La Cime in Osaka, has set up shop at CHIJMES with a dual-concept restaurant and brasserie. Inside, Hanazen serves a 16-course dinner menu that is heavy on kushiyaki (grilled skewers), while French classics - which have yet to launch at press time - dominate the outdoor dining menu.
French cuisine à la Japonaise is the speciality of chef Takada, who hails from Amami Oshima, a small island south of Japan. A graduate of top culinary school Ecole Hôtelière Tsuji, he cut his teeth at two-Michelin-starred Le Taillevent and three-Michelin-starred Restaurant Le Meurice Alain Ducasse in Paris, before returning to Japan to establish La Cime. Within two years, his restaurant clinched its first Michelin star and has consistently maintained its Michelin stars since 2016.
