In today’s world, food shows are as common as TikTok videos. However, Apple TV’s new docuseries Omnivore offers something truly unique, as Tatler finds out in an exclusive interview with co‑creator and culinary innovator René Redzepi of Noma fame and the Emmy Award‑winning executive producer Matt Goulding ahead of the show’s launch. And as we hear their stories, we find out that this eight‑part series narrated by the former is less about cooking and more akin to a David Attenborough‑style exploration of humanity through the lens of food.

Redzepi’s journey in the culinary world has been revolutionary. Known for his innovative approach at Noma, a restaurant that has been named the best in the world multiple times, the chef has always pushed the boundaries of what is possible in the kitchen. His philosophy centres around the use of local and seasonal ingredients, often foraged from the surrounding landscape, which has inspired chefs globally to rethink their approach to cooking.

This philosophy is evident in Omnivore, which explores eight ingredients that have shaped our world: banana, chilli, coffee, corn, pork, rice, salt and tuna. The series, which premiered this July, not just shines a spotlight on the food items themselves, but also delves into the stories and cultures behind them. Each episode is a journey into the heart of a different ingredient, uncovering its history, its role in various cultures and its impact on the world. This approach allows viewers to see food in a new light, not just as sustenance, but as a vital part of human history and culture.
