Getting the 'flow' right

What really impresses me is to be somewhere far away from regular amenities and yet find a high level of flawless execution in fine dining

IN MY LAST COLUMN, I had written about a restaurant which was located 6 metres below sea level and everyone dining there got fish for visual company as they worked their way through a course-laid meal, the diners that is, but perhaps, also the fish outside. This was at an Atmosphere resort called Ozen Life, Madhoo, in the Maldives. This time around, we are sticking with the Maldives, as also with fine dining, but changing the location.

Origine is located out by the waters of the sea, where you can hear the waves crashing into the pier below, continuously, as you lazily gaze into the west, where the sun has only recently set. This is the fine-dining outlet at another Atmosphere property called Ozen Reserve Bolifushi, and it makes no bones about just how up-ended their food, wine and service quotient is.

For one, you can't just walk in and dine here, oh no, sir. You will need to check in for at least a few nights (I think it was four, or maybe, seven) before they may throw this in as part of your package. Ad hoc, you'd be shelling out over $200 apiece for a meal here.
