INGREDIENTS

2½ cups tomatoes

Sea salt and freshly ground black pepper

1 garlic clove

1 red onion

2 Tbs. red wine vinegar

½ tsp. sugar

4 Tbs. extra virgin olive oil

1 bunch of Greek (or regular) basil

2 ripe avocados

8 anchovy fillets, in oil
