Watermelon ‘pizzas’
Salty feta and sweet watermelon make a great combo in this no-cook snack that comes together in a flash.
SERVES 6 PREP 10 MINS
1 Cut the watermelon slices into half moons or wedges and arrange on a board or platter.
2 Pile the feta, olives, avocado, rocket and basil onto the watermelon bases and serve with a grinding of black pepper and squeeze of lemon.
Per serving: 303 cals, 21.8g fat, 7.5g sat fat, 23.5g carbs
Strawberry slushies
Sweet, sharp and seriously drinkable, this refreshing boozy lemonade might just become your new summer favourite.
SERVES 6 PREP 5 MINS
✱ 300g frozen strawberries
✱ 100ml vodka
✱ 50ml triple sec
✱ 1tsp balsamic vinegar
✱ 275ml rose or pink lemonade
✱ Ice, to serve
1 Put the strawberries, vodka, triple sec, balsamic vinegar and lemonade into a blender, and blitz until smooth.
2 Put some ice into each glass or a pitcher and pour over the cocktail mix. Serve immediately. Per serving: 135 cals, 0.2g fat, 0g sat fat, 14g carbs
Labneh with pitta chips
This delicious Middle Eastern cream cheese is easy to make. Try adding flavourings like pesto, fresh herbs or harissa for a twist.
