Hitting the road in Sydney with my sights set on Peats Ridge, I couldn’t believe it was only going to take me around an hour’s drive (depending on traffic) from the CBD to get there. The scenery alone on the way is breathtaking, with lush bushland as far as the eye can see.
My first stop was The Sitting Duck restaurant at The Springs in Peats Ridge (the-springs.com.au), where executive chef Dan Capper sources local produce for a farm-to-plate experience – my fave dish was the truffled mac and cheese! The Springs even boasts an 18-hole golf course if you care for a swing.
