Rum finds its season in the sun

Be it a beach party or a sunny vacation the spirit that sets the mood going is rum. A byproduct of molasses (or sugar cane juice) production, rum has a decidedly island flavour, especially when blended with coconut and pineapple juice, or your favourite citrus flavour. You can practically feel the sunshine permeating from it – hold the (empty) glass up to your ear and you’re bound to hear the ocean.

August 16 is National Rum Day in the US, a day set aside to pay homage to this special spirit. In some countries it is July 10th. Rum is an alcohol “steeped in romanticism, thanks to its association with pirates in the Caribbean, and while it’s considered to be the third most popular alcoholic beverage, after whisky and vodka, on Rum Day it is the Number One drink.”

National Rum Day is upon us and what a great spirit to celebrate!! Not only is it one of the most, if not the most, widely used spirits in cocktails, it also has a fascinating history.

It all started in 17th century Barbados, though some argue it was actually in Brazil, when there was literally so much molasses (a by-product of making sugar) that plantation owners, not having any use for the stuff, dumped it into the ocean. It wasn't long before some crafty slaves figured out a way to ferment and later distill the molasses in turn creating the early predecessor to rum (which more closely resembles present day Guaro than rum).
