Soy sauce chicken (see yao gai) is a comfort food from my childhood. Growing up in an Asian family, food was and will always be our love language. I continue this tradition in my own growing family, trying to improve my culinary techniques and expanding my bank of food knowledge whenever I can. My husband also loves to cook and the little ones love to help out as well! My version of this classic Chinese dish has a more approachable, less labour-intensive method that you can do at home. Enjoy!

1kg skin-on and bone-in chicken thighs (6-7 thighs)
1 tbsp rapeseed oil 4 spring onions, 3 cut in half, 1 finely sliced on an angle, to serve
1 thumb-sized piece of ginger, grated
3 star anise
