When it comes to eating clean, many would think of similar things: no salt, no sugar, less fat. Today, there are many diets that have been introduced, and eating clean isn’t the simple ‘no-preservatives’ anymore. What exactly is clean eating? And what is the future of our food going to be like?
What Is Clean Eating!

In Asian countries like Singapore, where dishes are normally served with a serving of rice or noodles, it is difficult to find restaurants that serve keto-friendly dishes. Often, the number of keto-friendly restaurants is reduced to salad stands and cafes.

However, unknown to many, Montiat 1-Pavillion – authentic Italian cuisine. 3 years since her opening, Montiis making her move to become an iconic Italian dining powerhouse and aim to create an authentic Tuscan-Italian experience, from door to the table. One of the latest additions would be Executive Chef Emanuele Faggi and he will be headlining alongside with Head Chef Felix Chong, who has been the backbone of Monti’s excellent culinary experience. The duo brings classic and refined like the chicken cacciatora and charcoal-grilled prime USDA ribeye steak to the table. Chef Chong defined the ketogenic diet as “serving and eating food at its most natural form. That means no added preservatives, no complicated sauces or cooking styles.” Chef Faggi adding, “it is like using the tomato: skin, seeds and flesh, and serving it in a dish with minimal extra flavouring.”

In each keto-friendly dish at Monti, one can taste the earthiness of the vegetables, the smoky flavour of steak, and the simple sauces that complement the natural flavours. To accompany the guilt-free dishes, Monti also serves fresh and refreshing smoothies. Guests can choose between Monti’s wide range “I believe that there are diets like the ketogenic diet because people today are becoming more aware of what they eat,” said Chef Chong. He added, “a lot of diners think that it is difficult to find keto-friendly dishes in Singapore, but it is not true. Most of Monti’s dishes are keto-friendly, because we adopt the Italian style of honest cooking where we present our ingredients the closest to its natural form.”

To get a sense of Chef Aeron Choo’s work ethic as well as personality, we first have to tell the story of meeting her for the first time in her restaurant, Kappou Japanese Sushi Tapas Bar at Fortune Center. She’s working with her kitchen team, scrutinising the ingredients she has prepared, making sure that the slices of tuna she has made is up to scratch, prepping and discarding elements that she is dissatisfied with that don’t work with the dishes. Then, she pulls out a 1.7kg spiny lobster, fresh from the tank, and very much alive. When the lobster is clearly flailing from being yanked out of the tank it had been swimming in, she takes time to stroke, pet the lobster and whisper sweet nothings to calm the creature down.
