PECAN AND DATE SLICE

Preparation time 10 mins plus cooling

Cooking time 45 mins

Makes 16 pieces

1 cup self-raising flour, sifted

6 scoops vanilla Ensure nutrition powder, plus extra 1 scoop

100g butter, chopped

1/2 cup pecans, finely chopped, plus extra 2 cups pecans

2 Tbsp desiccated coconut

2 free-range eggs, lightly whisked

2/3 cup fresh dates, finely chopped

1/4 cup date syrup

Ensure nutrition powder is available at most pharmacies. It’s easy to serve on its own as a drink, but you can also try adding it into recipes, too!

STEP 1 Preheat oven to 160°C fan-forced (180°C conventional). Grease a 20cm square cake pan and line base and sides with baking paper.
