SUMMER COCKTAILS

Coffee Nutella Martini

Serves 4, Prep: 15 mins

¾ cup Nutella

2 x 16.5g sachets vanilla latte coffee

1 cup ice cubes

¼ cup vodka

¼ cup coffee-flavoured liqueur

2 cups vanilla ice-cream

1 Spoon ½ cup of the Nutella into a disposable piping bag. Twist top. Snip tip. Pipe around inside of four martini glasses (300ml capacity).

2 Empty coffee sachets into a medium heatproof jug. Stir in 1¼ cups hot, not boiling, water with remaining Nutella. Stir until Nutella is melted.

3 Pour coffee mixture into a blender with ice cubes, vodka, liqueur and ice-cream. Blend until smooth.

4 Pour martini evenly into prepared serving glasses. Serve immediately.
