HAM & MANGO SALAD

Prep + Cook 15 mins | Serves 4

1 baby cos lettuce, trimmed, sliced

2 cups watercress sprigs

1 Japanese cucumber, chopped

500 g leg ham, sliced

250 g tomato medley, halved

2 medium ripe mangoes, flesh chopped

1 green mango, flesh julienned

SPICY DRESSING

1 tsp ground cumin

2 tsps fish sauce

1⁄3 cup lime juice

1⁄3 cup grapeseed oil

1 tbsp sesame oil

2 tbsps finely sliced fresh mint leaves

1 tsp sugar

1 red chilli, seeded and sliced finely

1. SPICY DRESSING Combine all the ingredients for the dressing in a screw top jar and shake to combine. Set aside for 10 mins to allow flavours to combine.

2. Arrange lettuce, watercress, cucumber, ham and tomato on a serving platter. Top with both mangoes and drizzle over Spicy Dressing.

ASIAN PORK FILLET WITH SPICY MANGO CHUTNEY

Prep + Cook 40 mins + marinating | Serves 4

1 bunch coriander

1 tbsp grapeseed oil

½ tsp red chilli flakes

1 tbsp hoisin sauce

1 tsp rice wine vinegar

600 g pork fillet

Broccolini, snow peas, green beans, for serving

MANGO CHUTNEY

1 tbsp grapeseed oil

1 medium red onion, diced finely

1 tbsp grated fresh ginger

2 tbsps finely chopped lemongrass

2 tbsps tamarind puree

½ cup white wine vinegar

½ cup dark brown sugar

1 large red chilli, sliced finely

2 medium just ripe mangoes,

flesh chopped
