It’s been a while being locked indoors, and its not unnatural to get bored at home with an overwhelming feeling of anticipation about what next. Most of us have turned to cooking as a form of therapy, and one of the best activities to while away time. And while you’ve successfully mastered the art of making bread from scratch, it may be time to shift gears to something that might not even have crossed your mind—soup! These nutritious soups recipes are not only healthy but lip-smacking and easy to prepare. They are made with pantry-staples and will definitely be a hit with the whole family.

Tomato & Beetroot Soup

YOU NEED

  • 1 ½ beetroots (peeled, boiled and chopped)

  • 3 boiled tomatoes (chopped)

  • 1 boiled potato (peeled and chopped)

  • 2 tbsp olive oil

  • ½ tsp oregano

  • 2 tbsp chopped onions

  • Salt and pepper to taste

  • 2 tbsp fried or toasted bread croutons

YOU MUST

  • To make the vegetable broth, place the beetroots, potatoes and tomatoes in a mixer, and process till you get a broth.

  • In a vessel, heat the olive oil. Add the onions, oregano and sauté for one minute.
