Eleven Madison Park's chef and owner, Daniel Humm, is betting on it with Clemente Bar (11 Madison Ave.; clementebar.com), which opens this month and will be, he hopes, more attractive to spontaneous visitors than his tasting-menu restaurant. "If we can create a space where people can drop in and out more, that would be an amazing thing," Humm says.
