Pork & kimchi burgers
SERVES 6 PREP + COOK TIME 45 MINS
800g minced pork
1 ½ cups (120g) thinly shredded
cabbage 4 spring onions, chopped finely
2 tbsp Korean miso
1 ½ tbsp gochujang (Korean chilli paste)
1 tbsp dark soy sauce 2 tsp ground white pepper
2 tsp sesame oil
2 cups (400g) kimchi
1 small carrot, halved, julienned ½ cup (150g) kewpie (Japanese) mayonnaise
6 brioche burger buns,split (you can use regular burger buns)
Coriander leaves, chopped, to serve
1 Heat a covered gas barbecue with all burners set to high and the hood closed.
2 Place pork, cabbage, spring onion, 1 tablespoon of the miso, 1 tablespoon of the gochujang, soy sauce, pepper and sesame oil in a large bowl. Mix with your hands to combine well. Season with salt. Divide mixture into 6 portions and shape into patties.
