1. Soak the chia seeds in the passion fruit juice for four hours to make a coulis.
2. Heat one tablespoon of the olive oil in a pan over medium-high heat, and lightly char the chopped jalapeños. Add the remaining olive oil and heat until it smokes. Take off the flame, and set aside for the flavour of the jalapeños to infuse in the hot oil.
