FOUR ICE CREAM SANDWICHES
Caramel & coffee ice cream wafers
Mix 1 tbsp roughly chopped chocolate-coated coffee beans into 2 scoops softened coffee ice cream until combined, then transfer to a small loaf tin and freeze for a few hours, or until solid. Use round cutters to cut the ice cream to the same size as 4 caramel wafers, then sandwich between them. Makes 2.
