Burritos
MAKES 4 PREP 20 mins COOK 25 mins EASY V
vegetable oil, for frying
1 red onion, chopped
3 garlic cloves, crushed
2 spring onions, chopped
1 x 400g can black beans, drained
1 tsp all-purpose seasoning
1 tsp cumin
2 pouches cooked plain or brown rice (500g)
2 ripe plantain, cut at an angle into 1cm-thick slices
1 Little Gem lettuce, cut into quarters
4 soft tortillas
1 Heat 1 tbsp of oil in a large a frying pan over a medium-high heat and cook the red onion for 5 mins. Add the garlic and spring onions, and cook for 2-3 mins. Mix in the black beans, 1/2 tsp each of salt and pepper, the all-purpose seasoning and cumin. Cook for 5 mins, then remove from the heat, mix with the rice and set aside.
2 Heat 1 tbsp of vegetable oil in another pan and add the sliced plantain. Cook on a medium to low heat for 5 mins, then turn and cook for 5 mins until golden. Remove to a plate and set aside.
3 In the same pan, quickly fry the quartered lettuce, cut-sides down until slightly charred, about 2 mins.
4 Now to build a burrito, first put a tortilla on a flat surface, add the rice and bean mix down the middle, then the charred lettuce and the sliced plantain. Fold one long side over the filling, then one short side into the middle and roll it up. Seal your burrito in a hot pan for a minute or two. Repeat with the remaining ingredients to make four burritos, then tuck in.
