The Grilled Chicken Cheat Sheet

1 Marinate the Chicken

Combine these ingredients in a resealable bag or baking dish; add your chicken (the marinade makes enough for 212 to 3 pounds). Rub the marinade into the chicken, seal the bag or cover the dish and refrigerate at least 4 hours or overnight.

• 1/2 cup olive oil

• Zest of 1 lemon (in wide strips)

• 3 smashed garlic cloves

• 10 thyme sprigs, torn

• 4 parsley sprigs, torn

• 3 bay leaves

• 2 teaspoons of sugar

• 1/2 teaspoon kosher salt
