4 ways with BACK-TO-SCHOOL SCONES

No.1 Basic savoury

PREP + COOK TIME 40 MINUTES MAKES 16

Preheat oven to 220°C/200°C fan. Grease a deep 20cm square cake pan. Sift 2½ cups self-raising flour into a large bowl; rub in 30g butter. Stir in ½ cup grated extra tasty cheddar. Make a well in the centre; add 1¼ cups buttermilk. Using a knife, cut through flour mixture to form a soft, sticky dough. Gently knead on a floured surface until smooth; roll out to 2cm thick. Cut out 5cm rounds and place side by side in pan. Gently knead scraps of dough together; repeat pressing and cutting to make 16 scones in total. Brush tops with buttermilk. Bake for 20 minutes or until golden and scones sound hollow when tapped. Transfer to a wire rack to cool.
