Because we all have that one friend who’s on a health kick, enjoy these healthy-but-delicious recipes that all use antioxidant-packed matcha
Matcha lime & lemonade
Takes 15min, plus chilling
Makes about 1L
INGREDIENTS
800ml water
60g coconut sugar (or caster sugar)
2tsp matcha powder
100ml freshly squeezed lemon juice, strained
100ml freshly squeezed lime juice, strained
Handful of mint leaves
1 In a saucepan, combine 200ml of the water with the sugar and place over a low heat. Stir until the sugar has dissolved.
2 Add the matcha powder to a bowl with a little of the hot sugar water, whisking to mix. Add this to the remaining hot sugar water, mix well.
3 Pour the lemon and lime juice and remaining cold water into a sterilised-jar or bottle, then add the matcha sugar water and give it a really good shake. Chill for at least 30min.
4 To serve, pour the matcha lemonade over ice and muddle in a few mint leaves with a cocktail stick.
Matcha lollipops
Takes 15min, plus freezing
Makes 6
INGREDIENTS
500g Greek yogurt with honey
2tsp matcha powder
½tsp vanilla extract
100g white chocolate, broken into pieces
2tsp cacao nibs
2tsp hazelnuts, crushed
1 Whisk together the Greek yogurt, matcha powder and vanilla extract until thoroughly combined.
2 Divide the mixture between 6 lolly moulds. Insert a wooden lolly stick into the centre of each mould and freeze for at least 6hr.
3 Before serving, melt the chocolate by putting it in a heatproof bowl and setting over a saucepan of barely simmering water. Stir until melted and then set aside.
