Honey Mustard Chicken Kebabs
Prep time: 35 min Total time: 50 min
Serves: 6
1 pound baby red potatoes (about 18)
½ cup honey
1/3 cup dijon mustard
2 tablespoons olive oil
1/8 teaspoon cayenne pepper pounds boneless, skinless
1½ chicken breasts, cut into 1/2-inch cubes (about 24)
2 teaspoons kosher salt Black pepper, to taste
2 green bell peppers, cut into 2-inch pieces (about 24)
1 Soak six 12-inch wooden skewers in water for at least 15 minutes and up to 1 hour to prevent them from burning; drain.
2 Put the potatoes in a small saucepan and add enough water to cover by 1 inch. Bring to a boil over medium-high heat and cook until the potatoes can just be pierced with a fork, 3 to 5 minutes. Drain and set aside.
