I'm mostly a teetotaller, though I've thoroughly enjoyed the occasional wine glass - sometimes two or even three! My wine preferences? A crisp Rosé, a zesty Sauvignon Blanc, a buttery Chardonnay, and of course, Champagne-because why wait for a special occasion when bubbles are involved!

The perfect food and wine pairing can elevate the flavour of the dish and create an enjoyable and immersive dining experience. When advised correctly by a sommelier or the waitstaff, the right pairing allows diners to explore newer and fresher pairings. It helps heighten the textures, flavours, and overall quality of the food.

THE ART OF PAIRING WINE AND FOOD

Pairing wine with food is nothing short of an art almost akin to matchmaking! You may not get it right the first time, but with the right amount of practice, balance, harmony, and contrast, it's like a well-rehearsed symphony where every note hits perfectly. When you get it just right, dining becomes more than just a meal; it's an unforgettable adventure!

RAISING THE STEAKS

Leaner cuts of red meat, rich in flavour but not overly fatty, beautifully complement bold wines and create a perfect harmony when paired with Shiraz or Cabernet Sauvignon, whose high tannin content and full-bodied character enhance the depth of the meat. For a more delicate pairing, the juicy, lean texture of lamb or succulent fillets stands out with a Malbec's refined elegance or a subtle Pinot Noir. These wines bring out the richness of the meat.
