As a first-generation, American-born Thai now residing in the UK, I was raised mostly on Thai and Asian cuisines. I now try to recreate dishes that take me back to my earliest food memories. This is comfort food for me: my version of congee, a savoury rice porridge. I like to use soy sauce chicken legs, which I shred and add to the congee. Once you have all the elements, it doesn't take long to make at all. @atnancystable
