Guests at Regent Phu Quoc will have no problem planning a grand evening of gastronomy, as the Vietnamese hotel is home to Oku, a contemporary Japanese-French restaurant that showcases the finest foods of both worlds, from a menu by Chef Andy Huynh that adds an unconventional twist to traditional dishes. Pictured opposite is the chef’s Otoro sashimi with Tamari Soy dish.) Its interior, designed by Blink Design Group, sees the use of classic elements such as globe lights and cosy banquettes. After dining, guests can venture through a secret door to Bar Jade, a speakeasy parlour that harks back to a bygone era of luxury train travel, offering cocktails inspired by gemstones.
