THIS SUMMER, chef René Redezpi and Travel + Leisure US contributor Matt Goulding released their Apple TV+ docuseries, Omnivore. Each episode follows a single ingredient on its global journey, from harvesting to processing to cooking. T+L spoke to the Danish chef about the making of the series, and what's on his travel radar.
How did Omnivore come to be?
It's been over a decade in the making. We had been working on something in a similar vein, telling the stories of who we are through some select ingredients, such as coffee and corn. And then during COVID, so many decisions were made-for Noma and for myself. And one of them was: Now it's really time for us.
How did you narrow down what to cover and where to go?
