❯❯ Gazpacho Puree 2 cups diced apricots, 1 Tbs. olive oil, 2 tsp. sherry vinegar, 2 tsp. lime juice and 1⁄4 tsp. salt until smooth; cover. Chill 2 hrs. Ladle into bowls to serve.

1 In pot, mix eggs with enough water to cover by 1"; over high heat, bring to a boil. Cover. Remove from heat; let stand 8–9 min. Drain; let cool. Peel; halve.
2 In pot of salted boiling water, cook potatoes until tender, 10 min., adding beans during last 2 min. Drain. Let cool; halve. In bowl, whisk next 4 ingredients and 1⁄4 tsp. salt. Divide lettuce among 4 plates. Top with tuna, potatoes, beans, olives, capers and eggs. Serve with dressing.
