These cinnamon-kissed pastry sticks are dipped in white chocolate and topped with sprinkles to bring the party vibe!
1 In microwave-safe bowl, combine chocolate and heavy cream. Microwave in 15-sec. intervals, stirring, until smooth. Tint with food coloring; let cool. In pot, combine 1 cup water, butter and 1⁄4 tsp. salt; over medium heat bring to a boil, stirring, until butter melts. Add flour and cinnamon; stir until smooth. Reduce heat to low. Cook, stirring constantly, until mixture comes together and pulls away from pot, 1–2 min. Transfer to mixing bowl. On low speed, beat until cooled, 2 min. Add eggs one at a time; beat until smooth, 2 min. Transfer to large pastry bag fitted with star tip.
2 Line rimmed baking sheet with paper towels. In heavy bottom pot, heat 2" oil to 350°F. In batches, carefully pipe batter in oil, 4"–41⁄2" long, using scissors to cut batter. Fry, turning, until golden and cooked through, 1–2 min. Transfer to baking sheet. Dip in white chocolate mixture. Sprinkle with nonpareils.
