HOW TO DO IT
1 Heat the oven to 200C Fan/ Gas 7 and butter the slices of bread on one side. Put 4 slices of the buttered bread, butter side down, on to a large baking tray. Mix 175g of the cheese with the yogurt, then spread over the same 4 slices of bread.
2 Cut a 7cm circle in the centre of the remaining slices of buttered bread. Put the slices of bread on top of the cheese and yogurt mixture, butter side up. Crack an egg into each hole and sprinkle over the remaining cheese and season.
3 Bake for 12-15 mins until golden, crispy and the egg white has set.
TIP: DON’T WASTE THE CUT-OUT CIRCLES OF BREAD, BAKE THEM WITH THE TOASTIES AND SERVE ALONGSIDE OR SAVE TO SERVE AS CROUTONS ON SOUP.

Lying in the hospital bed, my husband Michael had tears of happiness in his eyes as he showed me a photo on his phone. 'Here she is,' he said proudly. 'There must be a mistake.'It was August 2010 and I'd not long before had an emergency caesarean. I'd not had a chance to see Winnie when she arrived as she'd been whisked away for tests because she was nearly two months premature.
