“Your liver is failing,” Tiffany Sutphin’s doctor said after she arrived at the ER with stomach pain, vomiting and diarrhea. “You’ll need a transplant to survive.”
Survive? the mom and wife reeled. She had expected doctors to attribute her digestive issues to a stomach bug or her leaky gut—an unhealthy gut lining that “leaks” through cracks to the surrounding tissues. Instead, she had been diagnosed with nonalcoholic fatty liver disease (NAFLD), which occurs when too much fat is stored in the liver.
As Tiffany learned, 25% of Americans have NAFLD—the most common cause of chronic liver disease—often caused by diabetes and obesity. Despite being unable to keep food down, Tiffany had struggled with her weight, gaining 100 pounds, which she’d need to shed to qualify for surgery.
She’d tried various diets in the past that had strained her liver, so her doctor put her on a Mediterranean plant-based diet, but it was too hard for her to digest. I need to go simpler, she realized.
