‘Chillies’ represent five species of the Capsicum genus, with wide differences in pungency, and a vast variation in flavour and aroma.
Colour, shape, wall thickness, size, pungency and aroma also differ remarkably.
Of the five commercial species, C. annuum is by far the most widely planted.
Varieties in this species include cayenne, jalapeño, Thai chilli and serrano.
All the bell peppers also belong to this species, but lack pungency.
