The number of times we've looked at a recipe and wondered whether the end result will be worth all the effort and dirty dishes is almost impossible to count. Recipe developer and food writer Ali Slagle is all too familiar with this conundrum, which she attempts to solve in her new cookbook I Dream of Dinner. “My promise is that the effort-to-reward ratio is engineered in your favor," says Slagle. "The recipes won't use more than 45 minutes, 10 ingredients (though usually just five to eight), and your indispensables,” like oil, butter, salt, and pepper. The result: Meals that don't require endless prep work while still delivering impressive flavors. Try one of these recipes tonight!

50/50 BUTTERED NOODLES AND GREENS

Serves 4

8 tbsp. (1 stick) butter

1 large bunch (about 1 lb.) broccoli rabe

1 cup (2 oz.) Parmesan cheese

1 lb. fettuccine or linguine

1. Bring a large pot halfway filled with salted water to a boil. Cut butter into 8 pieces and stick it back in the fridge. Thinly slice broccoli rabe, leaving the blossoms whole. Finely grate Parmesan.

2. Add noodles to the water and cook until al dente. It may seem like a snug fit and that's OK - you want extra-starchy pasta water. Two minutes before the pasta's done, add the broccoli rabe. Reserve 1 cup of pasta water and drain.
