As the weather gets warmer, we're starting to crave sweet, chilled cocktails. But many punches and frozen drinks tend to be loaded with sugar and high in alcohol, knocking us down fast. Enter the spritz. "Take an intensely flavored and usually bitter liqueur, tame it with a big glug of sparkling wine, then lighten it up with a splash of bubbly water and a handful ofice. That, in a nutshell, is the spritz," says Danielle Centoni, author of the new cookbook Just a Spritz. "It's the most refreshing, laid-back, intrinsically forgiving, and nearly effortless low-alcohol drink in the cocktail kingdom." Serve up one of these sips at your next gettogether or pour yourself one on Saturday night!

Savor a classic!

APEROL SPRITZ

Serves 1

2 oz. (60 ml) Aperol (or similar bitter

orange amaro)

3 oz. (90 ml) prosecco, chilled

2 oz. (60 ml) soda water, chilled

Orange half-wheel, for garnish

Skewered green olives, for garnish

1. Fill a tall wineglass three-quarters full with ice. Pour the Aperol and chilled prosecco over the ice and top with the soda water. Gently stir to combine.
