Melon with prosciutto

1 ripe charentais or cantaloupe melon
6 slices prosciutto Halve the melon, scrape out the seeds with a spoon and discard.
Cut each melon half into several crescent-shaped slices and arrange on a plate with the ham.

Avocado with prosciutto & rocket
Top the ham with wedges of avocado, then drizzle over a little balsamic vinegar and extra virgin olive oil and top with a few rocket leaves.
WHAT IS PROSCIUTTO?
Prosciutto is widely used to describe various seasoned and cured, air-dried hams. Prosciutto crudo, used here, is raw, air-dried pork (it's safe to eat, thanks to the curing process). Italian prosciuttos are labelled according to their city or province of origin. The most famous is 'prosciutto di Parma', which is salted and air-dried for at least eight months.
