SUN-DRIED TOMATO & BACON BEEF POT PIES

PREP + COOK TIME 1 HOUR 35 MINUTES SERVES 8

2 tablespoons olive oil 

750g gravy beef, cut into 2cm pieces 

¼ cup (35g) plain flour 

1 small leek (250g), pale section only, halved lengthways, sliced 

2 small carrots (140g), chopped finely 

2 trimmed celery stalks (200g), chopped finely 

2 small parsnips (180g), chopped finely 

2 cloves garlic, crushed 

2 bacon rashers (160g), trimmed, chopped 

½ cup (125ml) white wine 

2 cups (500ml) beef stock
