Cupcakes

Ingredients (Makes 12)

125g baking margarine, softened

125g caster sugar

2 large eggs

½tsp vanilla extract

150g self-raising flour, sieved

1 Preheat the oven to 190°C, (Fan Oven 170°C, Gas Mark 5). Line 12 muffin tins with coloured cupcake cases (we used Lakeland Colourful Cupcake Cases – www.lakeland.co.uk). Put all the ingredients in a bowl.

2 Using an electric whisk, gently whisk together and then continue whisking until smooth. Spoon into the cases, smooth the tops and bake for about 20min, until risen and firm to the touch. Cool on a wire rack.

Bake mixture in blue cupcake cases. Pipe or spread the top of the cakes with blue coloured butter icing. Cut a sponge finger in half and spread with a little butter icing. Roll out grey rolling icing thinly and wrap round each piece of sponge finger to cover completely. Stick upright into the top of the cake. Use trimmings to make flippers and arrange next to the sponge finger. Use small balls of grey icing to make whiskery cheeks, and stick them in place using a little water. Pipe the features using black and red piping icing.
