BUSY NIGHT WONTON SOUP

1 tbsp. sesame oil 

1. In a large pot, heat the oil over medium. Add garlic, ginger and the white parts of the scallions; sauté 1 min. Add mushrooms, carrots and red pepper flakes; sauté 1 min. Add broth and soy sauce and bring to a low boil.

2. Stir in wontons and spinach. Simmer 3 min or until the wontons are cooked, adding more broth if you like at any point.

3. Stir in the sesame oil and the reserved scallions. Divide among four bowls to serve.
