തയാറാകുന്ന വിധം
അരക്കിലോ ബീഫ് കഴുകി മൂന്നിഞ്ച് ചതുരക്കഷണങ്ങളായി മുറിച്ച് ഒന്നിടിച്ചു പരത്തി വയ്ക്കണം. നാലു വറ്റൽമുളക്, അര ചെറിയ സ്പൂൺ വീതം കുരുമുളക്, പെരുംജീരകം, മഞ്ഞൾപൊടി, അഞ്ചു ഗ്രാമ്പൂ, നാലു കഷണം കറുവാപ്പട്ട എന്നി വ വറുത്തുപൊടിക്കുക. ഇതിൽ രണ്ടു സവാള അരച്ചതും ഓരോ ചെറിയ സ്പൂൺ ഇഞ്ചിയും വെളുത്തുള്ളിയും അരിഞ്ഞതും രണ്ടു ചെറിയ സ്പൂൺ നാരങ്ങാനീരും ഉപ്പും ചേർത്ത് ഇറച്ചിയിൽ പുരട്ടി മൂന്നു നാലു മണിക്കൂർ വയ്ക്കുക. നാലു വലിയ സ്പൂൺ എണ്ണ ചൂടാക്കി രണ്ടു സവാള വഴറ്റി മാറ്റുക. ഇതിൽ വീണ്ടും നാലു വലിയ സ്പൂൺ എണ്ണ ചേർത്ത് ഇറച്ചിക്കഷണങ്ങൾ മാത്രം ചേർത്തു വറുത്തുകോരുക. ഇതിൽ ബാക്കി വന്ന മസാലയും സവാളയും ഒന്നരക്കപ്പ് വെള്ളവും ചേർത്ത് കുക്കറിൽ 25-30 മിനിറ്റ് വേവിക്കുക. നാരങ്ങാക്കഷണങ്ങളും മല്ലിയിലയും കൊണ്ട് അലങ്കരിച്ചു വിളമ്പാം.

കൂൺ - 100 ഗ്രാം കൊഞ്ച് -100 ഗ്രാം സവാള- 2 എണ്ണം തക്കാളി- 2 എണ്ണം പച്ചമുളക് - 2 എണ്ണം വെളുത്തുള്ളി- 6 അല്ലി ഇഞ്ചി- 1 ചെറിയ കഷണം വെളിച്ചെണ്ണ- 4 ടേബിൾ സ്പൂൺ കടുക് - കാൽ ടീസ്പൂൺ ഉണക്കമുളക് - 2 എണ്ണം കറിവേപ്പില- 2 തണ്ട് കശ്മീരി മുളകുപൊടി- ഒന്നര ടേബിൾ സ്പൂൺ മല്ലിപ്പൊടി- അര ടേബിൾ സ്പൂൺ&nbsp;മഞ്ഞൾപൊടി- കാൽ ടേബിൾ സ്പൂൺ ഗരംമസാല- അര ടീസ്പൂൺ
തയാറാക്കുന്ന വിധം
ഒരു പാനിൽ വെളിച്ചെണ്ണ ഒഴിച്ച് കടുകു പൊട്ടി ച്ച് ഉണക്കമുളക്, കറിവേപ്പില, സവാള, പച്ചമുളക്, ഇഞ്ചി, വെളുത്തുള്ളി എന്നിവ ഇട്ടു നന്നായി മൂപ്പിച്ച് തക്കാളി ഇട്ടു കൊടുക്കുക. അതിലേക്ക് മുളകുപൊ ടി, മഞ്ഞൾപൊടി, മല്ലിപ്പൊടി, ഗരം മസാല എന്നിവ ചേർത്തിളക്കി ആവശ്യത്തിനു വെള്ളം ഒഴിച്ചു തിള പ്പിക്കുക. കുറുകി വരുമ്പോൾ കൂൺ ചേർത്തു മൂടി വച്ചു വേവിക്കുക. ഇതിലേക്കു കൊഞ്ചു ചേർത്ത് അഞ്ചു സെക്കൻഡ് മൂടിവച്ചു വേവിച്ചു മസാലപ്പരുവം ആക്കി തീ അണയ്ക്കുക.
