പോഷകസമൃദ്ധവും സ്വാദിഷ്ഠവു മായ ഒരു ആഹാരപദാർഥമാണ് കൂൺ. പലതരം കൂണുകളുണ്ടെങ്കിലും കേരളത്തിന്റെ കാലാവസ്ഥയിൽ എളുപ്പം ഉണ്ടാക്കാവുന്ന കൂണാണ് ചിപ്പിക്കൂണും പാൽ കൂണും. കൊഴുപ്പ് വളരെ കുറവാണ്. പ്രമേഹം, രക്തസമ്മർദം, അർബുദം എന്നീ രോഗങ്ങളുടെ കാഠിന്യം കുറയ്ക്കാനും രക്തത്തിലെ കൊളസ്ട്രോളിന്റെ അളവ് നിയന്ത്രിക്കാനും ഉതകുന്നുവെന്നു പഠനങ്ങൾ തെളിയിച്ചിട്ടുണ്ട്. കൂൺ, മസാല ചേർത്ത് കറി വയ്ക്കാം, ഫ്രൈ ചെയ്യാം, പൊരിക്കാം. ബിരിയാണി ഉണ്ടാക്കാം. കറ്റ്, പക്കോട്, തോരൻ ,സൂപ്പ്, അച്ചാർ, ചമ്മന്തി തുടങ്ങി ഒരുപാട് വിഭവങ്ങൾ ഉണ്ടാക്കാം. കൂൺ വേവിക്കുന്നതിനു മുൻപ് 10 മിനിറ്റ് മഞ്ഞൾ വെള്ളത്തിൽ ഇട്ടുവയ്ക്കുന്നതു നല്ലതാണ്. മഴ ക്കാലത്ത് നല്ല രീതിയിൽ വിളവു ലഭിക്കുമെങ്കിലും വേനലിൽ വേണ്ടുന്ന രീതിയിൽ പരി പാലിച്ചാൽ മാത്രമേ നല്ല വിളവു ലഭിക്കൂ.
കൂൺ മുരിങ്ങയ്ക്കാ ഫ്രൈ 
ചേരുവകൾ ചിപ്പിക്കൂൺ അരിഞ്ഞത്-100ഗ്രാം, മുരി ങ്ങക്കായ്-2 ചീന്തി കാമ്പ് ചെറുതാക്കിയ ത്. മഞ്ഞൾ പൊടി കാൽ ടീസ്പൂൺ, മു ളകുപൊടി- അര ടീസ്പൂൺ, മല്ലിപ്പൊടിഅര ടീസ്പൂൺ, കുരുമുളകുപൊടി- കാൽ ടീസ്പൂൺ, വെളുത്തുള്ളി ചതച്ചത്- നാല് അല്ലി, പച്ചമുളക് - 3 എണ്ണം അരിഞ്ഞത്, വെളി ച്ചെണ്ണ -1 ടേബിൾസ്പൂൺ, ഉപ്പ് പാകത്തിന് വെള്ളം കാൽ കപ്പ്, കറിവേപ്പില രണ്ടു തണ്ട്.
പാകം ചെയ്യുന്നവിധം
&nbsp;ചിപ്പിക്കൂൺ അരിഞ്ഞതും മുരിങ്ങയ്ക്കാ കാമ്പും പാകത്തിന് ഉപ്പും ചേർത്ത് കാൽ കപ്പ് വെള്ളമൊഴിച്ചു വേവിക്കുക. വെള്ളം വറ്റി വരുമ്പോൾ മഞ്ഞൾ പൊടി, മുളകുപൊ ടി, മല്ലിപ്പൊടി എന്നിവയും വെളുത്തുള്ളി ചത ച്ചതും പച്ചമുളക് അരിഞ്ഞതും വെളിച്ചെണ്ണ യും ചേർത്ത് മൂടി വച്ച് ചെറിയ തീയിൽ വേ വിക്കുക. ശേഷം, കുരുമുളകുപൊടിയും കറിവേപ്പിലയും ചേർത്തിളക്കി യോജിപ്പിച്ച് ഉപയോഗിക്കാം..
