Rhubarb fool with pistachio cardamom shortbreads

SERVES 4 (with extra biscuits) PREP 25 mins plus 1 hr cooling and chilling COOK 45 mins EASY V ❄ unbaked dough only

  • 400g forced rhubarb, cut into 1cm chunks 
  • 150g golden caster sugar
  • 1 orange, zested and juiced
  • 1 tsp vanilla bean paste

For the shortbread

  • 225g unsalted butter, softened
  • 130g golden caster sugar
  • 1 tsp vanilla bean paste
  • ½ tsp ground cardamom
  • 1 egg
  • 225g plain flour
  • 100g slivered pistachios 

For the fool
