Although growth slows down during June and July in cold, Highveld areas, perennial herbs like rosemary, thyme, lavender, and oregano are frost-hardy and can continue to be productive throughout winter with a little bit of care.
Perennial herbs for winter

Their basic requirement is a sheltered, draft-free area that catches the sun for at least five hours a day. Even sage will go through winter if grown in full sun and in a position that is sheltered from cold winds.

There is no need to water as often as in summer. Wet soil stays cold for longer and can result in root rot. Feed with a liquid plant food, like Margaret Roberts Organic Supercharger, at half-strength once a month.

When harvesting collect small quantities at a time and always leave two growth points on the twig for re-shooting.
